I sneak by the knight by going up on the ledge and dropping down behind him. But I stand right behind him using spook and still don't get a backstab.
The backstab would just be a normal attack until the weapon makes contact with the other player. Dodging it would be no different than dodging any other R1. Also, Demon's Souls might of had the server act as a referee when it came to determining who dealt damage. Dark Souls doesn't have a third computer in the equation to do that.

You can backstab with any weapon (minus shields and staffs) using normal attack button. One-handed or two-handed does not matter. The damage from backstab / riposte is always based on one-handed damage. So you wont get bonus damage when two handing weapons.

When I first played dark souls, I don't know how to backstab or parry, so I found the game really challenging and fun. It wasn't until I got to new londo I learned to circle-stab darkwraiths, and the fun of the game was pretty much sucked out, except for the enemies I couldn't backstab.

So for dark souls 3 there’s a two step verification: one that you at the back of the opponent and another that the opponent is still there, if they roll out in time you get the pseudo backstab. It’s weird theirs basically a two step verification for it. The pseudo backstab is if your in position but they are not For those who struggle against the Abyss Watchers, here's an easy way: - Dragon Crest shield (100% physical, 89% fire) - stay close, circle anti-clockwise, dodge occasionally. - equip Dark Hand (can be purchased for 12,000, uses very little stamina, can easily swing 8-9 times, deals 352 damage at my SL 52 with equipped rings)
Simply wait for an opportunity, get into position, and hit R1 while behind an enemy to stab them in the back and inflict a massive amount of damage. Lining up the backstab animation can be a little finicky, though. In general, the most reliable position is to have the player character’s right hand (or the weapon-baring hand) line up with the
